Many people believe that real honey must crystallize during winter, and honey that remains liquid must be fake or heavily processed. However, this is not always true.
Honey is a natural product made by bees from flower nectar. When freshly extracted and not crystallized, honey usually appears as a thick, golden, glossy liquid. Under cooler temperatures, many types of honey naturally form crystals and become a semi-solid texture.
Honey crystallization is actually a natural characteristic of pure honey, but whether honey crystallizes depends on several factors, including the flower source, glucose content, moisture level, storage temperature, and natural crystal formation.
